Long honored as a spring tonic – foragers have historically ambled into the woods to gather this nutritious green treat after months of freezing winter – these pungent, garlicky, tender-leaved wild leeks are once again sprouting up at the Union Square Green market and farmer’s markets all over to be enjoyed as one of the first edible rites of the Season!

    Where can u find wild ramps at and what time of year is best!

    • Here on the east coast of North America, they start to spring up in the forest as early as April. You’ll find them peeking up in little patches of sun. Happy hunting!
